Ramzan Special: Sheer Khurma

Originating from Mughal India Sheer Khurma gradually gained popularity in the neighbour countries as well. Sheer means milk in Persian and Khurma means dates. And what else can be good to break a fast with other than dates. Dates have a lot of significance during the fasting days and is the first food that is consumed to break the fast. And is one of the most preferred sweet dish to break the fast.

Prep Time: 3-4 hours
Cook Time: 30 minutes
Serves: 3-4


Milk (or 2 cups of powder milk dissolved in 12 cups of water)- 1 litre
Sugar- 4 tbs
Cardamom (chhoti elaichi) seeds- 5-6 green
Chopped pistachios (pistay)- ¼ cup
Chopped coconut-dried- ½ cup
Chopped almond (badam)- ½ cup
Raisins (kishmish)- ¼ cup
Chopped dried dates (chhuwaray)- ¼ cup
Vermicelli (seviyaan)- 1 hand full
Kewra essence- 1 tsp

Preparation Method:

Wash the dry fruit and soak in little milk for 3-4 hours.
In a pot add milk, sugar, elaichi seeds and simmer on low heat until it starts to thicken.
Add the vermicelli and keep cooking till it softens.
Add the presoaked dry fruits and cook for 5 more minutes and just before removing from the heat add the kewra essence.
Can be served hot or chilled.
